Professional Bio
Dawn Schulz is co-owner of Prison City Brewing, in Auburn, NY.
Prison City opened in 2014, added a production brewery & taproom (also in Auburn NY) in 2020, and a 3rd location in Lake Placid NY in 2024.
Dawn has a BS in Business Management & Economics. She is a BJCP Beer Judge & Certified Cicerone®, is a member of the Girls Pint Out & Pink Boots Societies supporting women in the craft beer industry.
For Dawn, opening Prison City Brewing was about building a community with which to share her love of craft beer, and the culture & experiences of the craft beer industry.
She serves as Vice President of the New York State Brewer’s Association, President of the City of Auburn Business Improvement District, and is actively involved in many local organizations. Dawn has lived in Auburn, NY with her husband and their three children, for 20+ years.
